📸 1: Acqua Pazza (first draft) with Amaebi, Bottarga, Lemon Confit, Butterfly Pea - Crazy experiment according to @leonidas_xcii but I think it goes well with his bold personality.
📸 2: Brussels Sprouts with Hazelnuts, Green Apple, Bacon - This gentleman knows how to make me enjoy vegetables!
📸 3: Freshly picked Zuwai Crab in a pesto made from Lemon Verbena, Fennel Pollen, Mint Oil and other herbs. Topped with Uni, Fennel, Marigold and finished with Almond "Har Mi" (Chinese dried shrimp) Cream. 🤤
